How to Cook/Use Black Beans

Black beans are great whether you eat them plain or put them in your favorite dish.  They have a ton of nutritional value and can help you get your daily intake of fiber (which most Americans are deficient in)

Black Bean Burger (Version 1)

Ingredients:

– 1 15 oz can of black beans (rinse and drain them)

– 1/2 cup of jarred finely chopped roasted red peppers

– 1 clove of garlic

– 1/4 teaspoon of cayenne pepper

– 1/2 teaspoon of cumin

– 1/4 cup of cornmeal

Directions:

– Preheat oven to 375 degrees F

– Empty can of beans into a large bowl and microwave for 1 minute

– Add the peppers, garlic, cayenne pepper, and cumin with the beans and mash

– Add cornmeal and mix

– Take 1/2 cup scoops of mixture and flatten into patties onto a parchment paper lined baking sheet

– Bake in oven for 30 minutes and flip the patties half way through

I dare say these taste better than a hamburger…

Black Bean & Couscous Salad

Ingredients:

– 1/2 cup of uncooked couscous

– 3/4 cup of vegetable broth

– 1.5 tablespoons of olive oil

– 1 tablespoons of lime juice

– 1/2 teaspoon of red wine vinegar

– 1/4 teaspoon of ground cumin

– 4 green onions

– 1/2 red bell pepper

– 1/2 cup of corn kernels

– 1 can of black beans (rinsed and drained)

Directions:

– Bring broth to boil and stir in the couscous

– Cover the pot and remove from heat and let stand for 5 minutes

– In a large bowl, mix all the ingredients (except for the couscous) together

– Fluff couscous with a fork

– Mix the couscous and all the other ingredients together

Healthy, low calorie, and filling!

Black Bean Burger (Version 2)

Ingredients:

– 1 15 oz can of black beans (rinse and drain them)

– 1 clove of garlic

– 2 finely chopped portobello mushroom caps

– 1/2 cup of walnuts

– 1/4 cup of parsley

– 2 tablespoons of ground flaxseed

– 4 tablespoons of water

Directions:

– Preheat oven to 375 degrees F

– Empty can of beans into a large bowl and microwave for 1 minute

– Mash black beans

– Add mushrooms, walnuts, garlic, and parsley

– Take 1/2 cup scoops of mixture and flatten into patties onto a parchment paper lined baking sheet

– Bake in oven for 30 minutes and flip the patties half way through
