How to Cook/Eat Carrots:

Carrots are one of those foods that can be eaten raw or cooked.  Cooked carrots are more nutritious than raw because they release more vitamin A.  You can’t go wrong eating them either way though.

One popular way a lot of people eat carrots is by throwing them in stews, soups, and in the crock pot with a roast.  Below are some other ways you can eat carrots.

Roased Carrots

Ingredients:

–  2 carrots (if you are just cooking for one)

 – 1 tablespoon of olive oil

– Salt and pepper to taste

Directions:

– In a medium bowl, mix all the ingredients together.  Transfer the contents of the bowl to a sheet pan and put in the over for 20 minutes at 400 degrees F.

Easy to make in your truck.

Carrot Fries

Ingredients:

–  3 carrots peeled and cut into quarter inch thick fries

– 1 1/2 tablespoons of olive oil

– 2 tablespoons of parmesan cheese

– Salt and pepper to taste

Directions:

– Preheat your oven to 425 degree F

– Place carrot fries on parchment lined sheet pan.

– Use a brush to coat the fries with olive oil and spread salt and pepper of the carrots

– Cook the carrot fries about 10-12 minutes.  (You will be able to tell they are done if you are able to pierce them easily with a fork)

– Take out of oven and sprinkle with the parmesan

Now you have healthy and delicious fries that don’t make you feel bad after eating them.
