How to Cook/Use Couscous
If you are tired of eating the same old “carb” staples like rice, potatoes, quinoa, etc., give couscous a try. BONUS: It is SUPER easy to make. Literally takes only 5 minutes. Check out some recipes below:
Couscous & Chickpeas
Ingredients
– 1 cup of couscous
– 1 cup of chickpeas
– 1 1/2 cups of water or broth
– 1 teaspoon of olive oil
Directions
– Boil water and olive oil
– Add couscous and stir
– Remove pot from heat and let stand for 5 minutes
– Fluff the couscous with a fork and add the chickpeas
– Add any spices you like
Macaroni Couscous & Cheese
Ingredients
– 1 cup of couscous
– 1 tablespoon of olive oil
– 1 red bell pepper (diced)
– 2 cloves of garlic (minced)
– 1 1/2 cups of broth
– 1 small chopped onion
– 1 1/2 cups of shredded cheese
Directions
– Heat oil in a pan and add bell pepper, onion, and garlic
– Cook for 6 minutes
– Add broth and boil
– Add couscous and remove from heat for 5 minutes
– Fluff couscous with a fork and stir in the shredded cheese
