How to Cook/Use Cucumbers

Cucumbers are a great way to fill your appetite while only consuming very few calories.  A cucumber is 95% water and is a good way to stay hydrated.  Check out the recipes below to see how you can implement cucumber into your diet.

Cucumber Sandwich

Ingredients:

–   2 slices of bread (whole wheat)

– 2 tablespoons of cream cheese

– 1 sliced cucumber (you won’t use the whole thing)

– 2 tablespoons of alfalfa sprouts

– 1 sliced tomato

– 1 leaf of lettuce

– 1/2 mashed avocado

Directions:

-Spread both pieces of bread with the cream cheese.

-Place cucumber slices onto one piece of bread

– Cover cucumbers with alfalfa sprouts

– Place sliced tomato and lettuce on top

– Spread the other piece of bread with the avocado

– Close the sandwich

A very healthy lunch with very few calories.  Impossible to feel bad after eating this!

Cucumber Salad

Ingredients:

– 2 quartered and sliced cucumbers 

– 2 carrots shredded

– 1/4 grated onion

– 1 1/2 teaspoons of ground coriander

– 1/2 teaspoon ground black pepper

– 1/4 cup of apple cider vinegar

Directions:

-Combine and mix all ingredients together, except for vinegar

– Top coleslaw with vinegar

A great side dish

Pickled Cucumbers

Ingredients:

– 2 thinly sliced cucumbers

– 1/2 cup white vinegar

– 3 tablespoons of white sugar

– 2 tablespoons of water

– 1/4 teaspoon of salt

Directions:

– Place cucumbers into a bowl

– Stir other ingredients in a separate bowl

– Pour mixture over the cucumbers

– Refrigerate for at least 3 hours and as long as overnight
