How to Cook/Eat Quinoa:
Quinoa (pronounced keen-wah) is a super grain that is very similar to rice. In fact, you cook it just like you do rice. The taste is quite similar to rice as well. If you are wanting to get a healthier carb into your diet, try replacing rice with quinoa. Check out the recipes that use quinoa below.
Quinoa Salad
Ingredients:
– 1 cup of quinoa
– Salt for taste
– 1/4 cup of olive oil
– 1/2 teaspoon sea salt
– 1/4 cup of lemon juice
– 1 cucumber diced
– 3 tomatoes diced
– 1 cup of green onion
– 1 cup of shredded carrots
Directions:
– Cook quinoa by directions on box. Let it cool to room temperature and fluff with a fork
– Meanwhile, combine all the ingredients into a bowl and mix. Stir in room temperature quinoa.

Blueberry Breakfast Quinoa
Ingredients:
– 1/2 cup of quinoa
– 1 cup of nonfat milk
– 1/2 cup of blueberries
– 1 teaspoon of flax seed
Directions:
– Heat up milk in a saucepan for 2 to 3 minutes.
– Stir in quinoa into the milk and simmer until most of the liquid is absorbed (simmer for about 20 minutes)
– Stir blueberries into the quinoa mixture
– Pour quinoa mixture into bowl and top with the flax seed
