How to Cook/Use Sweet Potatoes

It’s time to get creative on how to get sweet potatoes in your diet.  Good news is that it isn’t too hard.  You can eat them plain or add them to a variety of dishes.  One quick tip: If you are wanting to cook a sweet potato as fast as possible, prick it all over with a fork and put it in the microwave for about 8 minutes and you will have a cooked sweet potato.

BBQ Sweet Potato Burger


– 1 15 oz can of chickpeas (rinse and drain them)

– 1 (cooked) sweet potato

– 1 clove of garlic

– 1 teaspoon of chili powder

– 1/4 cup of scallions (green onions)

– 1/4 cup of cornmeal

BBQ Sauce Ingredients:

– 6 oz of tomato paste

– 1/4 cup of water

– 2 tablespoons of maple syrup

– 2 tablespoons of apple cider vinegar

– 1/2 teaspoon chili powder

– 1/2 teaspoon garlic powder


– Preheat oven to 375 degrees F

– Empty can of beans into a large bowl and microwave for 1 minute

– Peel the cooked sweet potato and add it to the bowl of chickpeas

– Add garlic and chili powder and mash all together

-In a smaller bowl, mix together the tomato paste, water, syrup, vinegar, and chili powder (this is the BBQ sauce)

– Add 1/4 of the BBQ sauce to the large bowl along with the cornmeal and scallions

– Portion patties with 1/2 cup scoops and flatten onto a parchment lined baking sheet

– Bake for 40 minutes (Flip half way through)

– Serve remaining BBQ sauce with the burgers

Sweet Potato Wedges


– Desired amount of sweet potatoes

– Olive oil

– Garlic powder


– Black pepper


– Preheat oven to 400 degrees F

– Cut the sweet potatoes into wedges

– Toss wedges with olive oil

– Mix spices into a bowl and toss the wedges in

– Place wedges onto a baking sheet and bake for about 15 minutes

– Flip the wedges over and bake for another 10 minutes

Healthy alternative to french fries

Skillet Sweet Potatoes


– 5 cups of sweet potatoes (cut into small cubes)

– 1 cup of onion (diced)

– 1 clove of garlic

– 1/2 teaspoon of pepper

– 1/3 cup of cilantro

– 1/4 cup of green onions (finely chopped)

– 4 tablespoons of olive oil


– Heat 2 tablespoons of olive oil in a large skillet

– Add sweet potatoes and saute for 5 minutes while stirring occasionally

– Add onions and remaining olive oil

– Reduce heat and cover with lid for 5 minutes

– Remove lid and add garlic and pepper

– Increase heat and cook for 5 more minutes

– Right before serving, sprinkle cilantro and green onions over the sweet potatoes
