How to Cook/Use Tomatoes
Yes, tomatoes can be used in foods other than a greasy hamburger. Check out some healthy recipes that use tomatoes that are easy to make in your truck.

Mozzarella Tomato Salad
Ingredients:
– 1 tomato sliced
– an equal amount of sliced mozzarella
– 1 tablespoon of olive oil
– 1 tablespoon of balsamic vinegar
– 1 pinch of pepper
– 1 tablespoon of basil
Directions:
– Place tomato and mozzarella slices on a plate (alternating between the two)
– Mix the oil, vinegar, and pepper
– Drizzle mixture over the slices
– Sprinkle basil on top
A healthy lunch in 5 minutes!
Stuffed Tomatoes
Ingredients:
– 1 tomato
– 1/2 can of diced tomatoes (optional: with green chiles)
– 1/4 cup of chia seeds
– 1/3 cup of shredded mozzarella cheese
– 1/2 cup of ground turkey or turkey sausage
Directions:
– Preheat oven to 400 degrees F
– Cut the top off of your tomato and gut it like a pumpkin
– Place your hollow tomato on a baking pan
– Combine the diced tomatoes, chia seeds, and meat
– Scoop the mixture into the hollow tomato and top with the cheese
– Bake in the over for 15 minutes
A great, light, and delicious lunch or dinner.
Tomato Grilled Cheese
Ingredients:
– 2 tomato slices
– 2 cooked pieces of turkey bacon
– 1 slice of cheese
– 2 tablespoons of olive oil
– 2 pieces of whole wheat bread
Directions:
– Heat up the olive oil in a pan
– Place a piece of bread in the pan topped with the cheese, turkey bacon, two slices of tomato, and the second piece of bread (in that order)
– Cook both sides of the bread until golden brown
Another lunch that can be made in less than 10 minutes!
